Progressive fill of real rows beats a moving estimate. Users tolerate "still loading more" but they distrust a number that changes under them. If you must show a total, label it clearly as an estimate until final.
Yes - and keep sort order stable while streaming. Nothing worse than rows jumping around as new ones arrive. Append-only, then re-sort once on completion if needed.
